Description

These grilled chicken gyros are wrapped in sun-dried tomato pita and slathered with a creamy whipped feta spread. Packed with juicy chicken, fresh veggies, and bold Mediterranean flavor, they’re perfect for lunch, dinner, or summer gatherings.


Ingredients

  • ¾ cup Greek yogurt
  • ½ cup feta cheese
  • 2 tsp minced garlic
  • 10 fresh basil leaves
  • 4 sun-dried tomato pita rounds
  • 13 oz grilled chicken breast, cut into small pieces
  • Spinach or lettuce leaves (as desired)
  • Chopped roma tomato (as desired)
  • Chopped red onion (as desired)


Instructions

  1. In a food processor, blend Greek yogurt, feta, garlic, and basil until smooth. Set aside the whipped feta spread.
  2. Warm the sun-dried tomato pita rounds on a skillet or in the oven until soft and pliable.
  3. Spread a generous layer of whipped feta on each pita round.
  4. Top with grilled chicken pieces, spinach or lettuce, chopped tomatoes, and red onions.
  5. Fold the pitas to form gyros and serve immediately, optionally wrapped in parchment.

Notes

  • Whipped feta can be made up to 3 days in advance and stored in the fridge.
  • Warm pitas just before assembling to prevent cracking.
  • Use fresh herbs for the best flavor in the spread.
  • Customize veggie toppings based on your taste.
