- ¾ cup Greek yogurt
- ½ cup feta cheese
- 2 tsp minced garlic
- 10 fresh basil leaves
- 4 sun-dried tomato pita rounds
- 13 oz grilled chicken breast, cut into small pieces
- Spinach or lettuce leaves (as desired)
- Chopped roma tomato (as desired)
- Chopped red onion (as desired)
Instructions
- In a food processor, blend Greek yogurt, feta, garlic, and basil until smooth. Set aside the whipped feta spread.
- Warm the sun-dried tomato pita rounds on a skillet or in the oven until soft and pliable.
- Spread a generous layer of whipped feta on each pita round.
- Top with grilled chicken pieces, spinach or lettuce, chopped tomatoes, and red onions.
- Fold the pitas to form gyros and serve immediately, optionally wrapped in parchment.
Notes
- Whipped feta can be made up to 3 days in advance and stored in the fridge.
- Warm pitas just before assembling to prevent cracking.
- Use fresh herbs for the best flavor in the spread.
- Customize veggie toppings based on your taste.
