Description

A creamy and comforting green bean casserole made with tender fresh green beans, sautéed mushrooms, a smooth dairy free sauce, and topped with crispy fried onions for the perfect crunch.


Ingredients

  • 1 ½ pounds fresh green beans, trimmed
  • 2 tablespoons avocado oil
  • 16 ounces sliced mushrooms
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¾ teaspoon ground cumin
  • 1 teaspoon onion granules
  • 1 teaspoon garlic granules
  • 3 tablespoons vegan butter
  • 3 tablespoons all purpose flour
  • 2 ½ cups unsweetened almond milk
  • 1 to 1 ½ cups gluten free French fried onions, to taste


Instructions

  1. Preheat oven to 375 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.
  2. Bring a large pot of salted water to a boil. Add green beans and blanch for 4 minutes. Drain and set aside.
  3. Heat avocado oil in a large skillet over medium heat. Add sliced mushrooms and sauté until tender and golden.
  4. In the same skillet, melt vegan butter over medium heat. Whisk in flour and cook for 1 to 2 minutes until lightly golden. Gradually whisk in almond milk, stirring constantly until smooth and thickened.
  5. Add kosher salt, black pepper, ground cumin, onion granules, and garlic granules. Stir to combine.
  6. Fold the blanched green beans and sautéed mushrooms into the sauce. Transfer mixture to the prepared baking dish.
  7. Bake uncovered for 20 minutes.
  8. Sprinkle gluten free French fried onions evenly over the top and return to the oven for 5 to 10 minutes until golden and crispy.
  9. Let rest for a few minutes before serving to allow the sauce to set.

Notes

  • Do not overcook the green beans during blanching so they stay tender with a slight bite.
  • If the sauce becomes too thick, whisk in a small splash of almond milk before baking.
  • Add the fried onions during the final minutes to keep them crispy.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
