Description
A creamy and comforting green bean casserole made with tender fresh green beans, sautéed mushrooms, a smooth dairy free sauce, and topped with crispy fried onions for the perfect crunch.

- 1 ½ pounds fresh green beans, trimmed
- 2 tablespoons avocado oil
- 16 ounces sliced mushrooms
- ¾ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¾ teaspoon ground cumin
- 1 teaspoon onion granules
- 1 teaspoon garlic granules
- 3 tablespoons vegan butter
- 3 tablespoons all purpose flour
- 2 ½ cups unsweetened almond milk
- 1 to 1 ½ cups gluten free French fried onions, to taste
Instructions
- Preheat oven to 375 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.
- Bring a large pot of salted water to a boil. Add green beans and blanch for 4 minutes. Drain and set aside.
- Heat avocado oil in a large skillet over medium heat. Add sliced mushrooms and sauté until tender and golden.
- In the same skillet, melt vegan butter over medium heat. Whisk in flour and cook for 1 to 2 minutes until lightly golden. Gradually whisk in almond milk, stirring constantly until smooth and thickened.
- Add kosher salt, black pepper, ground cumin, onion granules, and garlic granules. Stir to combine.
- Fold the blanched green beans and sautéed mushrooms into the sauce. Transfer mixture to the prepared baking dish.
- Bake uncovered for 20 minutes.
- Sprinkle gluten free French fried onions evenly over the top and return to the oven for 5 to 10 minutes until golden and crispy.
- Let rest for a few minutes before serving to allow the sauce to set.
Notes
- Do not overcook the green beans during blanching so they stay tender with a slight bite.
- If the sauce becomes too thick, whisk in a small splash of almond milk before baking.
- Add the fried onions during the final minutes to keep them crispy.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
