Description

A rich, creamy white pizza topped with roasted garlic, spinach, and a blend of ricotta, mozzarella, feta, and parmesan cheeses for a Mediterranean-inspired flavor explosion.


Ingredients

  • 1 cup fresh spinach, chopped (or thawed and drained frozen spinach)
  • 1 medium head of garlic, roasted
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 pound pizza dough, store-bought or homemade


Instructions

  1. Preheat oven to 450°F (230°C) and place a pizza stone or baking sheet inside to heat.
  2. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden. Let cool and squeeze out the roasted cloves.
  3. In a bowl, mix ricotta cheese, mashed roasted garlic, spinach, olive oil, oregano, salt, and pepper until combined.
  4. Roll out pizza dough and transfer to a floured baking sheet or hot pizza stone. Pre-bake for 5 minutes.
  5. Spread the spinach and ricotta mixture evenly over the dough. Top with mozzarella, feta, and parmesan cheeses.
  6. Bake for 12–15 minutes until crust is golden and cheese is melted and bubbly.
  7. Sprinkle with crushed red pepper flakes and let cool for a few minutes before slicing and serving.

Notes

  • Drain spinach well to prevent soggy crust.
  • Brush the edges of the dough with olive oil before baking for a golden finish.
  • Use a blend of cheeses for richer flavor and creaminess.
  • For extra crunch, bake on a preheated pizza stone.
