Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • 2 eggs
  • ½ cup grape soda
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • Purple gel food coloring (a few drops)
  • 1 cup purple frosting
  • Rainbow sprinkles (for topping)


Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla, grape soda, milk, and a few drops of purple food coloring.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Fill cupcake liners about ⅔ full. For a swirl, add a drop of coloring on top and swirl with a toothpick.
  6. Bake for 18–20 minutes, or until a toothpick comes out clean. Cool completely.
  7. Frost with purple frosting and top with rainbow sprinkles.
