- 1 cup granulated sugar
- ½ cup unsalted butter
- 2 eggs
- ½ cup grape soda
- ¼ cup milk
- 1 tsp vanilla extract
- 1 ½ tsp baking powder
- ¼ tsp salt
- Purple gel food coloring (a few drops)
- 1 cup purple frosting
- Rainbow sprinkles (for topping)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla, grape soda, milk, and a few drops of purple food coloring.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Fill cupcake liners about ⅔ full. For a swirl, add a drop of coloring on top and swirl with a toothpick.
- Bake for 18–20 minutes, or until a toothpick comes out clean. Cool completely.
- Frost with purple frosting and top with rainbow sprinkles.
