Description

Soft and fluffy gingerbread cinnamon rolls filled with brown sugar and warm spices, finished with a smooth coffee glaze for a cozy latte inspired treat.


Ingredients

  • 3 1/2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3 tablespoons brewed coffee
  • 1 1/2 cups powdered sugar


Instructions

  1. Preheat oven to 350°F and lightly grease a 9×13 inch baking dish.
  2. In a large bowl mix flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl whisk eggs, whole milk, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry ingredients and mix until a soft dough forms.
  5. Roll the dough into a large rectangle on a lightly floured surface.
  6. Mix brown sugar, ground cinnamon, ground ginger, and ground nutmeg, then sprinkle evenly over the dough and gently press into the surface.
  7. Roll tightly into a log and slice into 12 even rolls.
  8. Place rolls in the prepared baking dish and bake for 22 to 25 minutes until golden and cooked through.
  9. Whisk powdered sugar with brewed coffee until smooth to create the glaze.
  10. Drizzle glaze over warm rolls and serve.

Notes

  • Do not overmix the dough to keep the rolls soft and tender.
  • Glaze the rolls while warm so it melts slightly into the layers.
  • Store leftovers in an airtight container for up to 3 days and reheat gently before serving.
