Garlic Stuffed Jacket Potatoes are crispy-skinned potatoes filled with a creamy garlic-infused filling. A delicious side dish or vegetarian main, perfect for garlic lovers.

- 4 large russet potatoes
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sour cream
- 1/4 cup grated cheddar cheese
- 2 tbsp butter, softened
- Salt and pepper, to taste
- Fresh chives, chopped (for garnish)
Instructions
- Preheat the oven to 200°C (400°F).
- Scrub the potatoes clean and poke a few holes in each with a fork. Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
- While the potatoes bake, heat a small pan over medium heat and sauté the minced garlic in a bit of olive oil for 1-2 minutes, until fragrant. Remove from heat.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut a slit in the top of each potato and gently scoop out the insides into a mixing bowl, leaving a border around the edges.
- To the scooped potato flesh, add sour cream, butter, cheddar cheese, sautéed garlic, and salt and pepper. Mash everything together until smooth and creamy.
- Stuff the garlic mixture back into the potato skins, dividing evenly among the potatoes.
- Return the stuffed potatoes to the oven for an additional 10-15 minutes, until the tops are golden and slightly crispy.
- Garnish with chopped chives and serve warm.
Notes
- You can add cooked bacon bits or extra cheese for a richer flavor.
- If you prefer a lighter version, you can substitute sour cream with Greek yogurt.
- For an extra crunchy top, sprinkle additional cheese over the stuffed potatoes before baking a second time.
