Description

Garlic Stuffed Jacket Potatoes are crispy-skinned potatoes filled with a creamy garlic-infused filling. A delicious side dish or vegetarian main, perfect for garlic lovers.


Ingredients

  • 4 large russet potatoes
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/4 cup grated cheddar cheese
  • 2 tbsp butter, softened
  • Salt and pepper, to taste
  • Fresh chives, chopped (for garnish)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Scrub the potatoes clean and poke a few holes in each with a fork. Rub the potatoes with olive oil and sprinkle with salt.
  3. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
  4. While the potatoes bake, heat a small pan over medium heat and sauté the minced garlic in a bit of olive oil for 1-2 minutes, until fragrant. Remove from heat.
  5. Once the potatoes are done, remove them from the oven and let them cool slightly.
  6. Cut a slit in the top of each potato and gently scoop out the insides into a mixing bowl, leaving a border around the edges.
  7. To the scooped potato flesh, add sour cream, butter, cheddar cheese, sautéed garlic, and salt and pepper. Mash everything together until smooth and creamy.
  8. Stuff the garlic mixture back into the potato skins, dividing evenly among the potatoes.
  9. Return the stuffed potatoes to the oven for an additional 10-15 minutes, until the tops are golden and slightly crispy.
  10. Garnish with chopped chives and serve warm.

Notes

  • You can add cooked bacon bits or extra cheese for a richer flavor.
  • If you prefer a lighter version, you can substitute sour cream with Greek yogurt.
  • For an extra crunchy top, sprinkle additional cheese over the stuffed potatoes before baking a second time.
