Ingredients

  • Baby or Yukon Gold Potatoes: 2 pounds, halved
  • Olive Oil: 3 tablespoons
  • Garlic (minced): 4 cloves
  • Salt: 1 teaspoon
  • Black Pepper: ½ teaspoon
  • Dried Thyme or Rosemary: 1 teaspoon
  • Paprika (optional): ½ teaspoon
  • Fresh Parsley (chopped): 2 tablespoons, for garnish
