Description

Garlic Chicken with Herbs is a rustic, flavorful dish made with crispy chicken thighs, loads of garlic, and a blend of fresh herbs simmered in a light lemony broth. It’s comforting, aromatic, and perfect for any night of the week.


Ingredients

  • 6 Bone-In, Skin-On Chicken Thighs
  • 10 Garlic Cloves, smashed
  • 3 tablespoons Olive Oil
  • 1 tablespoon Fresh Rosemary, chopped
  • 1 tablespoon Fresh Thyme, chopped
  • 1 teaspoon Oregano
  • 2 tablespoons Lemon Juice
  • 1/2 cup Chicken Broth
  • Salt and Black Pepper to taste


Instructions

  1. Heat a large skillet over medium-high heat.
  2. Pat chicken dry and season generously with salt and pepper.
  3. Add olive oil to the skillet and sear chicken skin-side down for 6-7 minutes until golden. Flip and cook 5 more minutes. Remove and set aside.
  4. Lower heat to medium, add smashed garlic, and cook 1-2 minutes until fragrant.
  5. Stir in rosemary, thyme, and oregano, then add broth and lemon juice, scraping up browned bits.
  6. Return chicken to the skillet, skin-side up. Cover and simmer for 10-12 minutes until cooked through.
  7. Let rest 5 minutes, then spoon sauce over the chicken and serve warm.

Notes

  • Use fresh lemon juice for best flavor.
  • Broil chicken for 2 minutes at the end for crispier skin.
  • Serve with mashed potatoes or crusty bread to soak up the sauce.
