- 1 cup shredded mozzarella cheese
- 1/2 cup mini pepperoni slices or chopped pepperoni
- 1/2 cup pizza sauce (plus more for dipping)
- 1/4 cup diced bell peppers (optional)
- 1/4 cup sliced black olives (optional)
- 1 tablespoon olive oil
- 2 tablespoons melted butter
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- Cooking oil for frying (vegetable or canola)
Instructions
- In a small bowl, mix melted butter, garlic powder, and dried parsley. Set aside.
- Lay out an egg roll wrapper and add about 1 tablespoon of pizza sauce in the center. Top with mozzarella, pepperoni, and any optional toppings.
- Fold the sides in, then roll tightly from bottom to top, sealing the edge with a bit of water.
- Repeat with remaining wrappers and filling.
- Heat oil in a deep skillet or fryer over medium-high heat.
- Fry egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy. Drain on paper towels.
- Brush each egg roll with the garlic butter mixture while still hot.
- Serve warm with extra pizza sauce for dipping.
