A flavorful and hearty Garlic Butter Lettuce Tomato & Grilled Chicken Sandwich made with golden toasted bread, juicy grilled chicken, crisp lettuce, and ripe tomato. Perfect for lunch or dinner, with optional cheese or avocado for extra indulgence.

- 8 slices thick-cut bread (Texas toast, sourdough, or your favorite hearty bread)
- 1/2 cup unsalted butter, softened
- 2–3 cloves garlic, finely minced
- 1 teaspoon dried Italian herbs (or a blend of parsley, oregano, and basil)
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 2 boneless, skinless chicken breasts
- Olive oil, for brushing
- Salt and black pepper, to taste
- 1–2 large ripe tomatoes, sliced
- Green leaf lettuce or Romaine leaves
- Mayonnaise, for spreading
- Optional: Slices of cheddar, provolone, or Swiss cheese; sliced avocado
Instructions
- Preheat a grill pan or outdoor grill to medium-high heat. Pat the chicken breasts dry and brush with olive oil. Season with salt and black pepper. Grill for 5–6 minutes per side or until internal temperature reaches 165°F (75°C). Rest for 5 minutes, then slice thinly across the grain.
- In a small bowl, mix softened butter with minced garlic, dried Italian herbs, and red pepper flakes until well combined.
- Spread garlic butter on one side of each bread slice. Toast bread in a skillet or griddle over medium heat, buttered side down, for 2–3 minutes until golden brown. Set aside, toasted side up.
- Wash and dry lettuce leaves. Slice tomatoes into thick rounds and season lightly with salt and pepper. Prepare cheese slices or avocado if using.
- On the untoasted side of bread, spread a thin layer of mayonnaise. Layer lettuce, tomato, grilled chicken, and optional cheese or avocado. Top with another bread slice, toasted side out. Gently press together and slice in half if desired.

- For a gluten-free version, use sturdy gluten-free bread that toasts well.
- Substitute grilled portobello mushrooms for chicken for a vegetarian option.
