- 1 lb ground beef
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1/2 cup honey BBQ sauce
- 1 tablespoon honey (optional, for extra sweetness)
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 8 small flour or corn tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1/2 cup sour cream (optional)
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
- Drain excess fat, then add butter and minced garlic. Sauté for 2–3 minutes until fragrant.
- Stir in honey BBQ sauce, honey (if using), smoked paprika, salt, and pepper. Simmer for 5 minutes until thickened.
- Warm the tortillas in a dry skillet or microwave.
- Spoon the beef mixture into each tortilla.
- Top with shredded cheese, red onion, and chopped cilantro.
- Add a dollop of sour cream if desired, and serve immediately.
Notes
- For spicier tacos, add a pinch of chili flakes or hot sauce to the beef.
- Use lettuce wraps instead of tortillas for a low-carb version.
- Prep the beef filling ahead of time and reheat before serving.
