- 1 pound boneless chicken breast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian herbs
- 8 ounces spaghetti pasta
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1/2 cup chicken broth
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Bring a pot of salted water to a boil and cook pasta until al dente. Drain and set aside.
- Season chicken pieces with salt, pepper, and Italian herbs.
- Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
- Add chicken in batches and sear until golden brown, about 4–5 minutes. Remove and set aside.
- Lower heat to medium, add remaining butter and garlic. Sauté for 1 minute.
- Pour in chicken broth, scraping up browned bits from the skillet.
- Add heavy cream and parmesan, stirring until melted and sauce is smooth.
- Return pasta and chicken to skillet. Toss to coat everything in the sauce.
- Garnish with red pepper flakes and parsley. Serve hot with extra parmesan if desired.
Notes
- Use freshly grated parmesan for the best texture and flavor.
- Don’t overcrowd the skillet — sear chicken in batches.
- Add pasta water if sauce becomes too thick.
- Finish with a splash of lemon juice for brightness.
