Ingredients

  • 1 pound boneless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs
  • 8 ounces spaghetti pasta
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1/2 cup chicken broth
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Bring a pot of salted water to a boil and cook pasta until al dente. Drain and set aside.
  2. Season chicken pieces with salt, pepper, and Italian herbs.
  3. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
  4. Add chicken in batches and sear until golden brown, about 4–5 minutes. Remove and set aside.
  5. Lower heat to medium, add remaining butter and garlic. Sauté for 1 minute.
  6. Pour in chicken broth, scraping up browned bits from the skillet.
  7. Add heavy cream and parmesan, stirring until melted and sauce is smooth.
  8. Return pasta and chicken to skillet. Toss to coat everything in the sauce.
  9. Garnish with red pepper flakes and parsley. Serve hot with extra parmesan if desired.

Notes

  • Use freshly grated parmesan for the best texture and flavor.
  • Don’t overcrowd the skillet — sear chicken in batches.
  • Add pasta water if sauce becomes too thick.
  • Finish with a splash of lemon juice for brightness.
