Ingredients

  • 1.5 pounds beef sirloin steak, cut into bite-sized pieces
  • 2 pounds russet potatoes, peeled and chopped
  • 4 garlic cloves, minced
  • 1/2 cup unsalted butter, divided
  • 1/3 cup heavy cream
  • 1/3 cup milk
  • 1 tablespoon olive oil
  • 2 tablespoons chopped parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika


Instructions

  1. Boil potatoes in salted water until fork-tender, about 15 minutes.
  2. Season beef with salt, pepper, onion powder, and paprika.
  3. Heat skillet over medium-high heat. Add olive oil and half the butter.
  4. Sear beef in batches until browned on both sides. Remove and set aside.
  5. Add remaining butter and minced garlic to the skillet. Sauté 1 minute.
  6. Return beef to pan and toss to coat in garlic butter. Remove from heat.
  7. Drain potatoes and mash with warm milk, cream, and butter. Season to taste.
  8. Serve mashed potatoes with beef bites on top, garnished with parsley.

Notes

  • Use warm dairy in potatoes to maintain a smooth texture.
  • Don’t overcrowd the pan when searing beef — do it in batches.
  • Beef bites and potatoes can be stored separately for up to 3 days.
