Instructions

  1. Prepare the Corn: Start with fresh or thawed frozen corn kernels. If using fresh corn, cut the kernels off the cob using a sharp knife. For extra sweetness, lightly roast them in a skillet for a couple of minutes before chilling.
  2. Mix the Dressing: In a bowl, combine mayonnaise, sour cream, lime juice, salt, and pepper. Whisk together until smooth and creamy to create the dressing that will coat the salad evenly.
  3. Combine Ingredients: Add the corn, chopped green onions, shredded cheddar cheese, and finely diced jalapeño (if using) to the dressing. Toss gently to ensure everything is coated well.
  4. Fold in Fritos and Herbs: Just before serving, gently fold in the Fritos chips and fresh cilantro to keep the chips crunchy and the herbs fresh.
