- 1 lb pizza dough
- 2 cans albacore tuna (preferably Wild Planet)
- 1 lb cherry or grape tomatoes
- 1/2 cup red onions, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 1 1/2 cups arugula
- 6–7 fresh basil leaves
- 3 tbsp capers
- 3 tbsp olive oil
- 1 lemon, juiced and zested
- Salt and pepper to taste
Instructions
- Preheat oven to 450°F (230°C) and line a baking sheet or pizza stone with parchment paper.
- In a bowl, toss tomatoes with olive oil, lemon juice, lemon zest, and a pinch of salt. Set aside.
- Roll out pizza dough to desired shape and thickness, then transfer to the prepared baking sheet.
- Brush dough lightly with olive oil and top with red onions, olives, and capers. Bake for 8–10 minutes, until golden and slightly crisp.
- Remove from oven and top with tuna, tomato mixture, arugula, and basil leaves.
- Finish with a drizzle of olive oil, extra lemon zest, and a sprinkle of black pepper. Slice and serve immediately.

- Pre-bake the crust before adding wet toppings to avoid sogginess.
