Description

A bright and fresh Mediterranean-inspired pizza topped with tuna, cherry tomatoes, olives, arugula, and lemon zest on a crisp golden crust — light, flavorful, and perfect for any occasion.


Ingredients

  • 1 lb pizza dough
  • 2 cans albacore tuna (preferably Wild Planet)
  • 1 lb cherry or grape tomatoes
  • 1/2 cup red onions, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1 1/2 cups arugula
  • 67 fresh basil leaves
  • 3 tbsp capers
  • 3 tbsp olive oil
  • 1 lemon, juiced and zested
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 450°F (230°C) and line a baking sheet or pizza stone with parchment paper.
  2. In a bowl, toss tomatoes with olive oil, lemon juice, lemon zest, and a pinch of salt. Set aside.
  3. Roll out pizza dough to desired shape and thickness, then transfer to the prepared baking sheet.
  4. Brush dough lightly with olive oil and top with red onions, olives, and capers. Bake for 8–10 minutes, until golden and slightly crisp.
  5. Remove from oven and top with tuna, tomato mixture, arugula, and basil leaves.
  6. Finish with a drizzle of olive oil, extra lemon zest, and a sprinkle of black pepper. Slice and serve immediately.

  • Use high-quality tuna for the best flavor and texture.
  • Pre-bake the crust before adding wet toppings to avoid sogginess.
  • Add arugula and basil after baking to keep them fresh and bright.
