Description

Soft homemade flatbreads stuffed with creamy feta, fresh spinach, parsley, and green onions, pan cooked until golden and brushed with olive oil for a warm and flavorful spring inspired meal.


Ingredients

  • 2 cups all purpose flour
  • 3/4 cup warm water
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 cup feta cheese, crumbled
  • 1 cup fresh spinach, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons green onions, finely sliced
  • 1 clove garlic, minced
  • 1/2 teaspoon black pepper


Instructions

  1. Heat a skillet over medium heat and set aside.
  2. In a mixing bowl, combine flour, warm water, 1 tablespoon olive oil, and salt. Mix until a soft dough forms.
  3. Knead the dough for about 5 minutes until smooth. Cover and let rest for 15 minutes.
  4. In a separate bowl, mix feta cheese, chopped spinach, parsley, green onions, minced garlic, black pepper, and 1 tablespoon olive oil until evenly combined.
  5. Divide the dough into 4 equal portions and roll each into a circle.
  6. Place a portion of filling in the center of each dough circle. Fold edges over the filling and gently roll again to flatten slightly.
  7. Place each flatbread in the hot skillet and cook for 3 to 4 minutes per side until golden brown and lightly charred.
  8. Brush cooked flatbreads with the remaining 1 tablespoon olive oil and serve warm.

Notes

  • Allow the dough to rest to ensure softness and easier rolling.
  • Do not overfill to prevent tearing.
  • Keep cooked flatbreads covered with a clean towel to maintain softness.
