- 2 cups all purpose flour
- 3/4 cup warm water
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 cup feta cheese, crumbled
- 1 cup fresh spinach, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons green onions, finely sliced
- 1 clove garlic, minced
- 1/2 teaspoon black pepper
Instructions
- Heat a skillet over medium heat and set aside.
- In a mixing bowl, combine flour, warm water, 1 tablespoon olive oil, and salt. Mix until a soft dough forms.
- Knead the dough for about 5 minutes until smooth. Cover and let rest for 15 minutes.
- In a separate bowl, mix feta cheese, chopped spinach, parsley, green onions, minced garlic, black pepper, and 1 tablespoon olive oil until evenly combined.
- Divide the dough into 4 equal portions and roll each into a circle.
- Place a portion of filling in the center of each dough circle. Fold edges over the filling and gently roll again to flatten slightly.
- Place each flatbread in the hot skillet and cook for 3 to 4 minutes per side until golden brown and lightly charred.
- Brush cooked flatbreads with the remaining 1 tablespoon olive oil and serve warm.
Notes
- Allow the dough to rest to ensure softness and easier rolling.
- Do not overfill to prevent tearing.
- Keep cooked flatbreads covered with a clean towel to maintain softness.
