- 8 oz (250 g) feta cheese
- 1/2 cup extra virgin olive oil
- 2 garlic cloves, peeled
- 2 tablespoons fresh parsley and thyme, finely chopped
- 1 fresh red chilli, finely chopped
- 1/4 teaspoon lemon rind, finely grated
- Black pepper, to taste
Instructions
- Cut the feta cheese into large, neat blocks.
- Place the feta into a clean jar or shallow bowl.
- Scatter the garlic cloves, chopped herbs, chopped chilli, lemon rind, and black pepper evenly over the feta.
- Pour the olive oil over the feta until fully submerged.
- Cover and refrigerate for at least 2 hours to allow flavors to develop.
- Remove from the refrigerator and let sit at room temperature for 15 minutes before serving.
- Spoon feta with some of the infused oil onto a serving dish and enjoy.
