These sizzling Fabulous Fajitas are loaded with marinated flank steak, colorful bell peppers, onions, and classic Tex-Mex spices, all wrapped in warm tortillas. Quick, flavorful, and fun to assemble, they’re perfect for weeknight dinners or weekend feasts.

- 1½ pounds flank steak
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large yellow onion, sliced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 lime, juiced
- 1 tbsp chili powder
- 1½ tsp ground cumin
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 8 flour tortillas
- 1 cup shredded cheddar cheese
Instructions
- Preheat a large skillet or grill pan over high heat. If using a grill, preheat to medium-high.
- In a bowl, mix olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Add flank steak and toss to coat. Let marinate for at least 30 minutes.
- Slice peppers and onion into thin strips. Set aside. Wrap tortillas in foil and warm in the oven.
- Remove steak from marinade and pat dry. Sear in hot skillet for 3–4 minutes per side. Let rest.
- In the same skillet, cook peppers and onions until tender and lightly charred.
- Slice steak thinly against the grain. Fill warm tortillas with meat and veggies. Top with cheddar cheese.
- Garnish with lime juice, avocado, or cilantro if desired, and serve hot.
Notes
- For extra flavor, let steak marinate overnight.
- Use cast iron for the best sear and smoky flavor.
- Don’t overfill tortillas to keep them easy to handle.
