Description

These sizzling Fabulous Fajitas are loaded with marinated flank steak, colorful bell peppers, onions, and classic Tex-Mex spices, all wrapped in warm tortillas. Quick, flavorful, and fun to assemble, they’re perfect for weeknight dinners or weekend feasts.


Ingredients

  • pounds flank steak
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large yellow onion, sliced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 lime, juiced
  • 1 tbsp chili powder
  • 1½ tsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat a large skillet or grill pan over high heat. If using a grill, preheat to medium-high.
  2. In a bowl, mix olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Add flank steak and toss to coat. Let marinate for at least 30 minutes.
  3. Slice peppers and onion into thin strips. Set aside. Wrap tortillas in foil and warm in the oven.
  4. Remove steak from marinade and pat dry. Sear in hot skillet for 3–4 minutes per side. Let rest.
  5. In the same skillet, cook peppers and onions until tender and lightly charred.
  6. Slice steak thinly against the grain. Fill warm tortillas with meat and veggies. Top with cheddar cheese.
  7. Garnish with lime juice, avocado, or cilantro if desired, and serve hot.

Notes

  • For extra flavor, let steak marinate overnight.
  • Use cast iron for the best sear and smoky flavor.
  • Don’t overfill tortillas to keep them easy to handle.
