- 1 cup mushrooms, sliced (button, cremini, or portobello)
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour (or gluten-free flour for a GF version)
- 1 1/2 cups vegetable broth
- 2 tbsp soy sauce or tamari
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp nutritional yeast (optional, for added flavor)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the mushrooms and cook for about 5-7 minutes, stirring occasionally, until they release their moisture and begin to brown.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Sprinkle the flour over the mushrooms and garlic, stirring to combine. Cook for 1-2 minutes to eliminate the raw flour taste.
- Slowly pour in the vegetable broth, stirring continuously to avoid lumps. Add the soy sauce, dried thyme, and nutritional yeast, if using.
- Bring the mixture to a simmer, cooking for 5-7 minutes, until the gravy thickens to your desired consistency. Season with salt and pepper to taste.
- Serve warm over mashed potatoes, roasted vegetables, or any other dish of your choice.
Notes
- This gravy can be stored in the fridge for up to 4 days. Reheat gently on the stove with a little extra broth if needed.
- If you prefer a smoother gravy, you can blend it using an immersion blender.
- For extra richness, add a splash of plant-based cream or coconut milk.
