Instructions
- Preheat Your Equipment: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with liners or spray with non-stick spray.
- Combine Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, whisk eggs, sugar, yogurt, milk, vanilla, and melted butter until smooth.
- Prepare Your Cooking Vessel: Lightly dust your diced peaches with a tablespoon of flour. Gently fold them into the wet mixture.
- Assemble the Dish: Add the wet ingredients to the dry ingredients and fold gently just until combined. Do not overmix. Use an ice cream scoop to portion batter into the muffin tin.
- Cook to Perfection: Bake for 18–22 minutes or until the tops are golden and a toothpick inserted in the center comes out clean.
- Finishing Touches: Cool in the pan for 5 minutes, then transfer to a wire rack. Optionally, dust with powdered sugar or add a glaze.
- Serve and Enjoy: Best served warm with a pat of butter or a drizzle of honey.
