Soft, moist, and filled with juicy peaches, these Easy Vanilla Peach Muffins bring sunshine to your table with every bite. Perfect for breakfast, brunch, or a sweet snack.

Ingredients

  • All-Purpose Flour: 2 cups – provides structure and softness.
  • Baking Powder: 2 teaspoons – helps the muffins rise tall and fluffy.
  • Baking Soda: 1/2 teaspoon – adds extra lift and softness.
  • Salt: 1/2 teaspoon – enhances all the sweet, fruity flavors.
  • Granulated Sugar: 3/4 cup – brings balanced sweetness.
  • Eggs: 2 large – binds everything and adds richness.
  • Greek Yogurt or Sour Cream: 1/2 cup – makes the crumb incredibly moist.
  • Whole Milk: 1/2 cup – lightens the batter and improves texture.
  • Vanilla Extract: 2 teaspoons – the warm, aromatic base of flavor.
  • Unsalted Butter: 1/2 cup (melted and cooled) – for richness and a tender crumb.
  • Fresh Peaches: 1 1/2 cups (peeled and diced) – juicy bites of summer in every bite.

Instructions

  1. Preheat Your Equipment: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with liners or spray with non-stick spray.
  2. Combine Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, whisk eggs, sugar, yogurt, milk, vanilla, and melted butter until smooth.
  3. Prepare Your Cooking Vessel: Lightly dust your diced peaches with a tablespoon of flour. Gently fold them into the wet mixture.
  4. Assemble the Dish: Add the wet ingredients to the dry ingredients and fold gently just until combined. Do not overmix. Use an ice cream scoop to portion batter into the muffin tin.
  5. Cook to Perfection: Bake for 18–22 minutes or until the tops are golden and a toothpick inserted in the center comes out clean.
  6. Finishing Touches: Cool in the pan for 5 minutes, then transfer to a wire rack. Optionally, dust with powdered sugar or add a glaze.
  7. Serve and Enjoy: Best served warm with a pat of butter or a drizzle of honey.

Notes

  • Use room temperature ingredients for best mixing.
  • Toss peaches in flour before folding in to prevent sinking.
  • Add coarse sugar on top for extra crunch.
  • Freeze leftovers individually for quick snacks later.
