- 1 medium cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 1/2 cups grated cheddar cheese
- 1/4 teaspoon mustard powder (optional)
- Salt and pepper to taste
- 1/4 cup breadcrumbs (optional for topping)
- 1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the cauliflower florets in salted water for 5-7 minutes, or until just tender. Drain well and set aside.
- In a saucepan, melt the butter over medium heat. Add the flour and whisk for 1-2 minutes to form a roux.
- Slowly add the milk while whisking continuously to avoid lumps. Cook for 3-5 minutes, or until the sauce thickens.
- Stir in the grated cheese and mustard powder (if using) until melted and smooth. Season with salt and pepper to taste.
- Place the cauliflower in an ovenproof dish and pour the cheese sauce over the top, ensuring the cauliflower is well covered.
- If using, sprinkle breadcrumbs over the top for a crispy finish.
- Bake in the oven for 15-20 minutes, or until golden and bubbling. Garnish with chopped parsley before serving.
Notes
- For extra flavor, you can add some grated Parmesan to the cheese sauce.
- If you prefer a spicier flavor, add a pinch of cayenne pepper or a splash of hot sauce to the sauce.
- This dish can be made ahead of time and baked just before serving.
