- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups beef broth
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 tablespoon vegetable oil
- 1/4 cup green onions, chopped (for garnish)
- 1/4 cup parsley, chopped (for garnish)
Instructions
- Heat the vegetable oil in a large skillet or Dutch oven over medium heat. Add the ground beef and cook, breaking it apart, until browned and cooked through, about 5-7 minutes.
- Remove excess fat from the pan, leaving about a tablespoon of drippings. Add the diced onion, bell pepper, and garlic. Cook for about 5 minutes, until the vegetables are softened.
- Stir in the rice, beef broth, paprika, cayenne pepper (if using), thyme, oregano, salt, and black pepper. Add the bay leaf and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove the bay leaf and fluff the rice with a fork. Garnish with green onions and parsley before serving.
Notes
- If you prefer a spicier version, increase the cayenne pepper or add hot sauce.
- For a more traditional version, you can use chicken liver or sausage in place of ground beef.
- Can be made ahead of time and reheated. The flavors tend to improve with time.
