Description

Ingredients

  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon vegetable oil
  • 1/4 cup green onions, chopped (for garnish)
  • 1/4 cup parsley, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or Dutch oven over medium heat. Add the ground beef and cook, breaking it apart, until browned and cooked through, about 5-7 minutes.
  2. Remove excess fat from the pan, leaving about a tablespoon of drippings. Add the diced onion, bell pepper, and garlic. Cook for about 5 minutes, until the vegetables are softened.
  3. Stir in the rice, beef broth, paprika, cayenne pepper (if using), thyme, oregano, salt, and black pepper. Add the bay leaf and bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Remove the bay leaf and fluff the rice with a fork. Garnish with green onions and parsley before serving.

Notes

  • If you prefer a spicier version, increase the cayenne pepper or add hot sauce.
  • For a more traditional version, you can use chicken liver or sausage in place of ground beef.
  • Can be made ahead of time and reheated. The flavors tend to improve with time.
