- Vodka: 1/4 cup
- Cream cheese, softened: 8 ounces
- Sour cream: 1/2 cup
- Blue cheese crumbles: 1/4 cup
- Manzanilla olives, chopped: 1/4 cup
- Olive brine: 2 tablespoons
- Garlic powder: 1 teaspoon
- Salt: 1/2 teaspoon
- Black pepper: 1/4 teaspoon
Instructions
- Heat olive oil or butter in a skillet over medium heat.
- Add the sliced onion and shallots and cook slowly, stirring often.
- Sprinkle in the sugar and continue cooking until deeply golden and caramelized.
- Deglaze the pan with vodka, scraping up any browned bits, and let it cook off.
- Remove the skillet from heat and allow the onions to cool slightly.
- In a mixing bowl, combine cream cheese and sour cream until smooth.
- Stir in blue cheese crumbles, chopped olives, olive brine, garlic powder, salt, and black pepper.
- Fold in the cooled caramelized onions and shallots until evenly mixed.
- Cover and chill for at least 30 minutes before serving.
