Description

Dark Chocolate Pistachio Cream Cheese Muffins are a rich and decadent treat, featuring dark chocolate chips, crunchy pistachios, and a creamy, tangy cream cheese filling. Perfect for breakfast or dessert, these muffins are indulgent and full of flavor.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup dark chocolate chips
  • 1/2 cup shelled pistachios, chopped
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract (for cream cheese filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease with cooking spray.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and well combined.
  4. Add the milk and mix until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the dark chocolate chips and chopped pistachios.
  6. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  7. Fill each muffin cup about halfway with muffin batter. Add a small spoonful of the cream cheese mixture into the center of each muffin, then top with the remaining muffin batter to cover the cream cheese filling.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of the muffins comes out clean (with a few crumbs). The muffins should be firm to the touch and slightly cracked on top.
  9. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra flavor, you can sprinkle a few more chopped pistachios on top of the muffins before baking.
  • Store muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
  • If you prefer a sweeter muffin, you can add more sugar to the batter according to your taste.
