- 1 lb lean ground beef
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 28 oz canned diced tomatoes
- 2 tsp chili powder
- 1 tsp cumin
- 8 oz cream cheese, cubed
- 1 cup shredded sharp cheddar cheese
Instructions
- In a skillet over medium heat, brown ground beef. Drain excess grease.
- Add chopped onion and minced garlic. Sauté for 3 minutes until fragrant.
- Transfer beef mixture to crockpot. Stir in diced tomatoes, chili powder, and cumin.
- Place cubed cream cheese on top. Do not stir. Cover with lid.
- Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- 30 minutes before serving, stir in shredded cheddar cheese until melted and creamy.
- Adjust seasoning to taste and serve hot with desired toppings.
