- 1 lb steak (such as sirloin or ribeye), cut into bite-sized pieces
- 4 large potatoes, peeled and diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup cooked bacon, crumbled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/4 cup green onions, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the steak pieces for 4-5 minutes, until they are seared on all sides. Remove from the skillet and set aside.
- In the same skillet, sauté the diced onion and garlic until softened, about 3 minutes.
- In the crockpot, layer the potatoes, browned steak, sautéed onions and garlic, and season with salt, pepper, paprika, and thyme.
- Pour the beef broth over the ingredients in the crockpot, then cover and cook on low for 6-7 hours, or until the potatoes are tender and the steak is cooked through.
- Once cooked, stir in the shredded cheddar cheese and sour cream until melted and creamy.
- Top with crumbled bacon and chopped green onions before serving. Serve hot.
Notes
- You can use other types of cheese, such as mozzarella or gouda, for a different flavor.
- If you prefer extra crispy bacon, cook it separately and add it just before serving.
- This dish can be made ahead and reheated. The flavors meld together even better after sitting for a day.
