Description

Crockpot Loaded Steak and Potato Bake is a hearty, comforting dish made with tender steak, potatoes, cheese, and bacon, all cooked together in a slow cooker for a rich and flavorful meal.


Ingredients

  • 1 lb steak (such as sirloin or ribeye), cut into bite-sized pieces
  • 4 large potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup cooked bacon, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the steak pieces for 4-5 minutes, until they are seared on all sides. Remove from the skillet and set aside.
  2. In the same skillet, sauté the diced onion and garlic until softened, about 3 minutes.
  3. In the crockpot, layer the potatoes, browned steak, sautéed onions and garlic, and season with salt, pepper, paprika, and thyme.
  4. Pour the beef broth over the ingredients in the crockpot, then cover and cook on low for 6-7 hours, or until the potatoes are tender and the steak is cooked through.
  5. Once cooked, stir in the shredded cheddar cheese and sour cream until melted and creamy.
  6. Top with crumbled bacon and chopped green onions before serving. Serve hot.

Notes

  • You can use other types of cheese, such as mozzarella or gouda, for a different flavor.
  • If you prefer extra crispy bacon, cook it separately and add it just before serving.
  • This dish can be made ahead and reheated. The flavors meld together even better after sitting for a day.
