- 20 uncooked medium shrimp, peeled and deveined
- 4 ounces cream cheese, softened
- 1 cup all-purpose flour
- 2 eggs, lightly beaten
- 2 cups panko bread crumbs
- Oil for deep-fat frying
Instructions
- Butterfly the shrimp along the outside curves to create a pocket.
- Spread about 1 teaspoon of softened cream cheese inside each shrimp.
- Prepare three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Coat each shrimp first in flour, then dip into eggs, and finally coat with panko breadcrumbs.
- Heat oil in an electric skillet or deep-fat fryer to 375°F (190°C).
- Fry shrimp in small batches for 3-4 minutes or until golden brown and crispy.
- Remove and drain on paper towels.
- Discard toothpicks before serving.
