A golden and crispy one-pan potato bake layered with tender slices, topped with perfectly set eggs and bubbling melted cheese for a comforting and satisfying meal.


Ingredients

  • 4 medium russet potatoes, thinly sliced
  • 6 large eggs
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat oven to 400°F.
  2. In a large bowl, toss the thinly sliced potatoes with olive oil, minced garlic, salt, and black pepper until evenly coated.
  3. Heat a cast iron skillet over medium heat and arrange the potatoes in an even, slightly overlapping layer.
  4. Cook on the stovetop for 8 to 10 minutes without stirring, until the bottom begins to turn golden and crispy.
  5. Sprinkle the mozzarella and cheddar cheese evenly over the potatoes.
  6. Create small wells in the potato layer and crack the eggs into each well.
  7. Transfer the skillet to the oven and bake for 12 to 15 minutes, until the egg whites are set and the cheese is melted and lightly golden.
  8. Remove from the oven and allow to rest for 5 minutes.
  9. Sprinkle with freshly chopped parsley before slicing and serving.

Notes

  • Pat the potato slices dry before seasoning to help them crisp properly.
  • Avoid moving the potatoes while they cook to maintain a crispy crust.
  • For firmer yolks, bake an additional 2 to 3 minutes.
  • Reheat leftovers in a skillet to restore crispiness.
