- 4 medium russet potatoes, thinly sliced
- 6 large eggs
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat oven to 400°F.
- In a large bowl, toss the thinly sliced potatoes with olive oil, minced garlic, salt, and black pepper until evenly coated.
- Heat a cast iron skillet over medium heat and arrange the potatoes in an even, slightly overlapping layer.
- Cook on the stovetop for 8 to 10 minutes without stirring, until the bottom begins to turn golden and crispy.
- Sprinkle the mozzarella and cheddar cheese evenly over the potatoes.
- Create small wells in the potato layer and crack the eggs into each well.
- Transfer the skillet to the oven and bake for 12 to 15 minutes, until the egg whites are set and the cheese is melted and lightly golden.
- Remove from the oven and allow to rest for 5 minutes.
- Sprinkle with freshly chopped parsley before slicing and serving.
Notes
- Pat the potato slices dry before seasoning to help them crisp properly.
- Avoid moving the potatoes while they cook to maintain a crispy crust.
- For firmer yolks, bake an additional 2 to 3 minutes.
