Description

Golden and crunchy on the outside, tender and savory on the inside, these crispy furikake salmon bites are packed with flaky salmon, seasoned rice, and a flavorful umami boost. Perfect as an appetizer, snack, or light meal with avocado and dipping sauce.


Ingredients

  • 2 cups cooked salmon, flaked
  • 2 cups cooked sushi rice, slightly cooled
  • 2 tablespoons furikake seasoning
  • 1 large egg, lightly beaten
  • 1 cup panko breadcrumbs
  • 1 tablespoon soy sauce
  • 1 large avocado, sliced for serving
  • Neutral oil spray, as needed


Instructions

  1. Preheat oven to 400°F or air fryer to 375°F.
  2. In a mixing bowl, gently combine flaked salmon, cooked sushi rice, furikake seasoning, lightly beaten egg, and soy sauce until just mixed.
  3. Line a baking sheet with parchment paper or lightly grease the air fryer basket.
  4. Scoop about 2 tablespoons of the mixture and shape into small balls. Roll each ball in panko breadcrumbs, pressing lightly so they adhere.
  5. Arrange evenly on the prepared baking sheet or basket. Lightly spray with neutral oil. Bake for 15 to 18 minutes or air fry for 10 to 12 minutes, until golden brown and crisp.
  6. Remove and let cool for a few minutes to firm up slightly.
  7. Serve warm with sliced avocado and soy based dipping sauce if desired.

Notes

  • Chill shaped bites for 15 minutes before cooking if the mixture feels too soft.
  • Avoid overcrowding to ensure even crisping.
  • Reheat leftovers in the oven or air fryer at 350°F until warmed through and crisp.
