Description

Deliciously soft sugar cookies with a rich butter toffee flavor and a crinkly, crackly texture.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup toffee bits
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the toffee bits.
  7. Place the 1/4 cup of granulated sugar in a small bowl. Roll dough into 1-inch balls and roll them in the sugar to coat.
  8. Place the sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are golden and the centers are set. The cookies will continue to firm up as they cool.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  11. Serve and enjoy the crispy, buttery goodness!

Notes

  • For an extra toffee flavor, you can fold in more toffee bits or use chocolate toffee bits.
