Description

  • 6 ounces semisweet chocolate, melted
  • 3/4 cup granulated sugar, divided
  • 1/4 cup brown sugar
  • 3 large eggs, divided
  • 2 teaspoons vanilla extract, divided
  • 1/2 cup all purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 2 large egg yolks
  • 2 tablespoons extra granulated sugar, for topping


Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, combine melted butter and melted semisweet chocolate until smooth.
  3. Whisk in 1/2 cup granulated sugar and brown sugar until blended.
  4. Add 2 eggs and 1 teaspoon vanilla extract, mixing until combined.
  5. Stir in flour, cocoa powder, and salt until just incorporated.
  6. Spread batter evenly in prepared pan and bake for 20 to 25 minutes until just set. Cool completely.
  7. Reduce oven temperature to 325 degrees Fahrenheit.
  8. In a separate bowl, whisk heavy cream, remaining 1/4 cup granulated sugar, 1 egg, 2 egg yolks, and remaining 1 teaspoon vanilla extract until smooth.
  9. Pour custard mixture over cooled brownie layer and bake for 25 to 30 minutes until custard is set but slightly jiggly in the center.
  10. Cool to room temperature, then refrigerate for at least 3 hours until fully chilled.
  11. Sprinkle extra granulated sugar evenly over the top and caramelize with a kitchen torch until golden and crisp.
  12. Allow sugar topping to harden, then slice into squares and serve chilled.

Notes
