- 2 cups cooked chicken breast, diced or shredded
- 2 tbsp butter
- 4 cloves garlic, minced
- 2 cups milk
- 1 cup chicken broth
- 8 oz Velveeta cheese, cubed
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Cook tortellini according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the cooked chicken and sauté for 2–3 minutes until warmed through. Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic for 1 minute until fragrant.
- Sprinkle in flour and whisk for 1–2 minutes to form a roux.
- Gradually add milk and chicken broth, whisking constantly until smooth and slightly thickened.
- Stir in Velveeta cubes, mozzarella, and Parmesan cheese. Cook on low, stirring until cheese is fully melted and sauce is creamy.
- Season with Italian seasoning, salt, and pepper.
- Add the cooked tortellini and chicken to the sauce, tossing gently to coat.
- Simmer for 2–3 minutes to heat through. Garnish with fresh parsley before serving.
Notes
- For extra flavor, add a pinch of red pepper flakes to the sauce.
- Use rotisserie chicken to save time on preparation.
