Description
A rich and creamy Tuscan-inspired chicken dish featuring tender seared chicken in a garlic-Parmesan sauce with sun-dried tomatoes and spinach. Served with fettuccine or linguine, it’s comforting, flavorful, and perfect for weeknight dinners or special occasions.
Ingredients
Scale
- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- 8 oz fettuccine or linguine pasta
- 2 tablespoons minced fresh garlic
- 1 cup heavy cream or heavy whipping cream
- 2 tablespoons dry white wine (optional)
- 1/2 cup low-sodium chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano leaves
- 1/2 teaspoon crushed rosemary
- 1/2 teaspoon dried thyme leaves
- 1/2 to 1 tablespoon garlic powder
- 1/2 cup grated Parmesan cheese
- 1 cup fresh baby spinach
- 1/2 cup sun-dried tomatoes, thinly sliced
- Salt and pepper, to taste
Instructions
- Cook the pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and garlic powder. Sear for 5–6 minutes per side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Pour in white wine to deglaze, scraping up any browned bits.
- Add chicken broth, basil, oregano, rosemary, thyme, and heavy cream. Simmer gently for 3–4 minutes to thicken slightly.
- Stir in Parmesan cheese, sun-dried tomatoes, and spinach. Let the spinach wilt and the sauce thicken to a creamy consistency.
- Return the chicken to the skillet and spoon sauce over it. Toss in the cooked pasta to coat, or serve the pasta topped with chicken and sauce.
- Garnish with extra Parmesan and a drizzle of olive oil before serving.
Notes
- Use freshly grated Parmesan for a smoother sauce.
- Don’t overcook the chicken to keep it tender.
- Add spinach last to keep it bright and fresh.
- Skip the wine if desired and use extra broth with a splash of lemon juice instead.
- Leftovers reheat best with a splash of cream or broth.
