Description

A rich and creamy Tuscan-inspired chicken dish featuring tender seared chicken in a garlic-Parmesan sauce with sun-dried tomatoes and spinach. Served with fettuccine or linguine, it’s comforting, flavorful, and perfect for weeknight dinners or special occasions.


Ingredients

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • 8 oz fettuccine or linguine pasta
  • 2 tablespoons minced fresh garlic
  • 1 cup heavy cream or heavy whipping cream
  • 2 tablespoons dry white wine (optional)
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon crushed rosemary
  • 1/2 teaspoon dried thyme leaves
  • 1/2 to 1 tablespoon garlic powder
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh baby spinach
  • 1/2 cup sun-dried tomatoes, thinly sliced
  • Salt and pepper, to taste


Instructions

  1. Cook the pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and garlic powder. Sear for 5–6 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Pour in white wine to deglaze, scraping up any browned bits.
  4. Add chicken broth, basil, oregano, rosemary, thyme, and heavy cream. Simmer gently for 3–4 minutes to thicken slightly.
  5. Stir in Parmesan cheese, sun-dried tomatoes, and spinach. Let the spinach wilt and the sauce thicken to a creamy consistency.
  6. Return the chicken to the skillet and spoon sauce over it. Toss in the cooked pasta to coat, or serve the pasta topped with chicken and sauce.
  7. Garnish with extra Parmesan and a drizzle of olive oil before serving.

Notes

  • Use freshly grated Parmesan for a smoother sauce.
  • Don’t overcook the chicken to keep it tender.
  • Add spinach last to keep it bright and fresh.
  • Skip the wine if desired and use extra broth with a splash of lemon juice instead.
  • Leftovers reheat best with a splash of cream or broth.
