- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 1 celery stalk, chopped
- 500g chicken breast, cooked and shredded
- 1 can (400g) diced tomatoes
- 1/4 cup sun-dried tomatoes, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 1 tbsp fresh basil, chopped (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery, and sauté until softened, about 5 minutes.
- Add the shredded chicken, diced tomatoes, sun-dried tomatoes, chicken broth, oregano, thyme, salt, and pepper. Bring to a simmer.
- Reduce heat and stir in the heavy cream. Let the soup simmer for another 10 minutes, allowing the flavors to meld together.
- Add the fresh spinach and cook until wilted, about 2 minutes.
- Stir in the grated Parmesan cheese, then taste and adjust seasoning if necessary.
- Serve the soup hot, garnished with fresh basil if desired.
Notes
- For a lighter version, you can substitute heavy cream with a lower-fat milk or a dairy-free cream.
- This soup pairs well with crusty bread for dipping.
- You can make this soup ahead of time and store it in the refrigerator for up to 3 days.
