Ingredients

  • 12 oz cheese tortellini
  • 1 lb ground sausage
  • 2 cups chopped kale
  • 3 garlic cloves, minced
  • 1 yellow onion, diced
  • 1 can (14 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)


Instructions

  1. Heat olive oil in a large soup pot. Brown the sausage, then transfer to a plate.
  2. Sauté onion in the same pot until soft, then add garlic and cook until fragrant.
  3. Stir in crushed tomatoes, broth, Italian seasoning, and red pepper flakes. Bring to a simmer.
  4. Add tortellini and return sausage to the pot. Simmer for 4–6 minutes until pasta is tender.
  5. Stir in chopped kale and cook until wilted.
  6. Lower heat and add heavy cream. Stir gently, season with salt and pepper to taste.
  7. Serve hot with crusty bread and optional toppings like parmesan or herbs.

Notes

  • Add kale at the end for best color and texture.
  • Let soup rest a few minutes before serving to deepen flavors.
  • Use pre-cooked tortellini to save time.
