- 1 lb ground sausage
- 2 cups chopped kale
- 3 garlic cloves, minced
- 1 yellow onion, diced
- 1 can (14 oz) crushed tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Heat olive oil in a large soup pot. Brown the sausage, then transfer to a plate.
- Sauté onion in the same pot until soft, then add garlic and cook until fragrant.
- Stir in crushed tomatoes, broth, Italian seasoning, and red pepper flakes. Bring to a simmer.
- Add tortellini and return sausage to the pot. Simmer for 4–6 minutes until pasta is tender.
- Stir in chopped kale and cook until wilted.
- Lower heat and add heavy cream. Stir gently, season with salt and pepper to taste.
