Description

Creamy Garlic Herb Chicken with Golden Potatoes is a comforting one-pan dinner featuring tender seared chicken breasts, crispy golden potatoes, and a rich, creamy garlic herb sauce. Perfect for weeknights yet elegant enough for guests.

  • 4 boneless, skinless chicken breasts
  • 1 1/2 pounds golden potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 4 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt, pepper, and half of the Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken on each side for 4–5 minutes until golden brown. Remove and set aside.
  3. In the same skillet, add 1 tablespoon butter and the potatoes. Season with salt, pepper, and remaining Italian seasoning. Cook for 10–12 minutes, stirring occasionally, until golden and tender. Remove and set aside with the chicken.
  4. Lower heat to medium and add remaining butter to the skillet. Sauté garlic for 1 minute until fragrant.
  5. Pour in chicken broth, scraping up browned bits from the bottom of the pan. Stir in heavy cream, thyme, and parsley. Simmer for 3–4 minutes until slightly thickened.
  6. Return chicken and potatoes to the skillet, spoon sauce over the top, and cook for another 3–4 minutes until chicken is fully cooked through (165°F/74°C internal temperature).
  7. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, add a splash of white wine to the sauce before the cream.
  • Can substitute chicken thighs for a juicier option.
  • Serve with crusty bread to soak up the creamy sauce.
