- 4 boneless, skinless chicken breasts
- 1 1/2 pounds golden potatoes, halved or quartered
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 4 garlic cloves, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts with salt, pepper, and half of the Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken on each side for 4–5 minutes until golden brown. Remove and set aside.
- In the same skillet, add 1 tablespoon butter and the potatoes. Season with salt, pepper, and remaining Italian seasoning. Cook for 10–12 minutes, stirring occasionally, until golden and tender. Remove and set aside with the chicken.
- Lower heat to medium and add remaining butter to the skillet. Sauté garlic for 1 minute until fragrant.
- Pour in chicken broth, scraping up browned bits from the bottom of the pan. Stir in heavy cream, thyme, and parsley. Simmer for 3–4 minutes until slightly thickened.
- Return chicken and potatoes to the skillet, spoon sauce over the top, and cook for another 3–4 minutes until chicken is fully cooked through (165°F/74°C internal temperature).
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, add a splash of white wine to the sauce before the cream.
- Can substitute chicken thighs for a juicier option.
- Serve with crusty bread to soak up the creamy sauce.
