Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 tbsp whole grain mustard
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried thyme)
  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil and butter over medium-high heat.
  3. Cook the chicken breasts for 5-6 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add garlic and cook for 1 minute until fragrant.
  5. Add chicken broth, heavy cream, Dijon mustard, whole grain mustard, and thyme to the skillet. Stir well to combine.
  6. Bring the sauce to a simmer and cook for 3-5 minutes until it thickens slightly.
  7. Return the chicken breasts to the skillet and coat them with the sauce. Simmer for another 2-3 minutes until the chicken is heated through and the sauce has thickened.
  8. Garnish with fresh parsley and serve with your choice of side dish.

Notes

  • This dish pairs well with mashed potatoes, rice, or steamed vegetables.
  • If you prefer a spicier sauce, add a pinch of cayenne pepper.
  • For a lighter version, you can substitute the heavy cream with half-and-half or milk.
