- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp butter
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 2 tbsp Dijon mustard
- 1 tbsp whole grain mustard
- 2 cloves garlic, minced
- 1 tbsp fresh thyme, chopped (or 1 tsp dried thyme)
- Salt and pepper to taste
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil and butter over medium-high heat.
- Cook the chicken breasts for 5-6 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add garlic and cook for 1 minute until fragrant.
- Add chicken broth, heavy cream, Dijon mustard, whole grain mustard, and thyme to the skillet. Stir well to combine.
- Bring the sauce to a simmer and cook for 3-5 minutes until it thickens slightly.
- Return the chicken breasts to the skillet and coat them with the sauce. Simmer for another 2-3 minutes until the chicken is heated through and the sauce has thickened.
- Garnish with fresh parsley and serve with your choice of side dish.
Notes
- This dish pairs well with mashed potatoes, rice, or steamed vegetables.
- If you prefer a spicier sauce, add a pinch of cayenne pepper.
- For a lighter version, you can substitute the heavy cream with half-and-half or milk.
