This Cranberry Cream Cheese Swirl Bread is a soft and deliciously sweet bread, with a creamy tangy swirl of cream cheese and tart cranberries. Perfect for breakfast or a sweet snack.

- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup milk
- 1/4 cup melted butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh cranberries
- 8 oz cream cheese, softened
- 1/4 cup sugar (for cream cheese filling)
- 1/2 teaspoon vanilla extract (for cream cheese filling)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, sugar, salt, and baking powder.
- In another bowl, mix together milk, melted butter, egg, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until combined.
- Fold in cranberries gently into the batter.
- In a separate bowl, beat together cream cheese, sugar, and vanilla extract until smooth.
- Pour half of the batter into the prepared loaf pan and spread evenly. Spoon the cream cheese mixture over the batter and swirl gently using a knife or skewer.
- Top with the remaining batter and swirl the cream cheese mixture again to create a marbled effect.
- Bake for 55-60 minutes or until a toothpick inserted comes out clean.
- Allow to cool before slicing and serving.
Notes
- For extra sweetness, sprinkle sugar on top of the loaf before baking.
- You can substitute the cranberries with raisins or other berries if preferred.
- This bread can be stored in an airtight container for up to 3 days.
