Description

This Cranberry Cream Cheese Swirl Bread is a soft and deliciously sweet bread, with a creamy tangy swirl of cream cheese and tart cranberries. Perfect for breakfast or a sweet snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh cranberries
  • 8 oz cream cheese, softened
  • 1/4 cup sugar (for cream cheese filling)
  • 1/2 teaspoon vanilla extract (for cream cheese filling)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, sugar, salt, and baking powder.
  3. In another bowl, mix together milk, melted butter, egg, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until combined.
  4. Fold in cranberries gently into the batter.
  5. In a separate bowl, beat together cream cheese, sugar, and vanilla extract until smooth.
  6. Pour half of the batter into the prepared loaf pan and spread evenly. Spoon the cream cheese mixture over the batter and swirl gently using a knife or skewer.
  7. Top with the remaining batter and swirl the cream cheese mixture again to create a marbled effect.
  8. Bake for 55-60 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before slicing and serving.

Notes

  • For extra sweetness, sprinkle sugar on top of the loaf before baking.
  • You can substitute the cranberries with raisins or other berries if preferred.
  • This bread can be stored in an airtight container for up to 3 days.
