- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen and thawed)
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 tbsp lime juice
- 1 tsp cumin
- Salt and pepper, to taste
Instructions
- In a large bowl, combine black beans, black-eyed peas, corn, cherry tomatoes, bell pepper, red onion, avocado, and cilantro.
- In a separate small bowl, whisk together olive oil, red wine vinegar, lime juice, cumin, salt, and pepper.
- Pour the dressing over the bean and veggie mixture. Gently toss to combine, being careful not to mash the avocado.
- Chill in the refrigerator for at least 30 minutes to let the flavors meld.
- Serve with tortilla chips or as a topping for grilled meats or tacos.
Notes
- For a spicier version, add chopped jalapeño or a dash of hot sauce.
- Best consumed within 1-2 days due to the fresh avocado.
- You can make the dip ahead of time and add the avocado just before serving.
