Description

Cowboy Caviar is a vibrant, fresh, and zesty dip made with beans, vegetables, and a tangy dressing—perfect for parties, picnics, or as a healthy snack.


Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen and thawed)
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp lime juice
  • 1 tsp cumin
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine black beans, black-eyed peas, corn, cherry tomatoes, bell pepper, red onion, avocado, and cilantro.
  2. In a separate small bowl, whisk together olive oil, red wine vinegar, lime juice, cumin, salt, and pepper.
  3. Pour the dressing over the bean and veggie mixture. Gently toss to combine, being careful not to mash the avocado.
  4. Chill in the refrigerator for at least 30 minutes to let the flavors meld.
  5. Serve with tortilla chips or as a topping for grilled meats or tacos.

Notes

  • For a spicier version, add chopped jalapeño or a dash of hot sauce.
  • Best consumed within 1-2 days due to the fresh avocado.
  • You can make the dip ahead of time and add the avocado just before serving.
