- 2 cups cottage cheese
- 6 large eggs
- 1.5 cups shredded cheddar cheese
- 0.5 cup milk
- 1 cup fresh spinach, chopped
- 0.5 cup diced bell pepper
- 0.5 cup diced onion
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon garlic powder
Instructions
- Preheat oven to 375 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.
- In a large mixing bowl, whisk together cottage cheese, eggs, milk, salt, black pepper, and garlic powder until well combined.
- Stir in chopped spinach, diced bell pepper, diced onion, and 1 cup of shredded cheddar cheese.
- Pour the mixture evenly into the prepared baking dish.
- Sprinkle the remaining 0.5 cup shredded cheddar cheese over the top.
- Bake for 35 to 40 minutes, until the center is set and the top is golden brown.
- Allow the bake to rest for 5 to 10 minutes before slicing and serving.
Notes
- Drain excess moisture from vegetables if needed before mixing.
- Do not overbake to keep the texture tender and moist.
- This dish can be assembled the night before and baked in the morning.
