Description

A warm and fluffy cottage cheese breakfast bake made with eggs, cheddar, and fresh vegetables, baked until golden on top and perfect for a protein packed morning meal.


Ingredients

  • 2 cups cottage cheese
  • 6 large eggs
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup milk
  • 1 cup fresh spinach, chopped
  • 0.5 cup diced bell pepper
  • 0.5 cup diced onion
  • 0.75 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder


Instructions

  1. Preheat oven to 375 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.
  2. In a large mixing bowl, whisk together cottage cheese, eggs, milk, salt, black pepper, and garlic powder until well combined.
  3. Stir in chopped spinach, diced bell pepper, diced onion, and 1 cup of shredded cheddar cheese.
  4. Pour the mixture evenly into the prepared baking dish.
  5. Sprinkle the remaining 0.5 cup shredded cheddar cheese over the top.
  6. Bake for 35 to 40 minutes, until the center is set and the top is golden brown.
  7. Allow the bake to rest for 5 to 10 minutes before slicing and serving.
