- 2 pounds russet potatoes, peeled and cubed
- 2 cups green cabbage, finely chopped
- 4 scallions, thinly sliced
- 4 tablespoons butter, plus extra for serving
- ½ cup whole milk, warmed

Instructions
- Place the cubed potatoes in a large pot and cover with cold salted water.
- Bring to a boil and cook for 15 to 20 minutes until fork tender.
- While the potatoes cook, melt 2 tablespoons of butter in a skillet over medium heat.
- Add the chopped cabbage and sauté for about 5 minutes until tender.

- Mash the potatoes until smooth.
