Description

Ingredients

  • 24 chocolate sandwich cookies, crushed
  • 5 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 2 tablespoons instant coffee granules
  • 2 tablespoons warm water
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 2 cups heavy whipping cream, cold
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a bowl, combine crushed chocolate sandwich cookies and melted butter until evenly mixed.
  3. Press the mixture firmly into the bottom and sides of a pie dish.
  4. Bake the crust for 8 to 10 minutes, then allow it to cool completely.
  5. Dissolve instant coffee granules in warm water and set aside.
  6. In a large bowl, beat cream cheese and granulated sugar until smooth.
  7. Add the dissolved coffee, vanilla extract, salt, and 1 cup of heavy whipping cream. Beat until thick and creamy.
  8. In a separate bowl, whip the remaining 1 cup heavy whipping cream with powdered sugar until soft peaks form.
  9. Spread the coffee filling evenly into the cooled crust.
  10. Top with the whipped cream and smooth the surface.
  11. Refrigerate for at least 4 hours before slicing and serving.
