Description

A comforting and flavorful rice dish made with tender flakes of cod, aromatic vegetables, and fluffy long grain rice gently simmered together. Simple, nourishing, and perfect for a wholesome family meal.


Ingredients

  • 1 pound cod fillets, skinless and cut into large chunks
  • 1 1/2 cups long grain white rice, uncooked
  • 1 medium yellow onion, finely chopped
  • 2 medium ripe tomatoes, diced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 3 cups water or low sodium vegetable broth


Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chopped onion and sauté for 4 to 5 minutes until softened.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Stir in diced tomatoes and cook for about 3 minutes until slightly softened.
  6. Add the rinsed rice and stir to coat with the vegetable mixture.
  7. Pour in water or broth, then add salt and black pepper. Bring to a gentle boil.
  8. Reduce heat to low, cover, and simmer for 12 minutes.
  9. Nestle cod chunks into the partially cooked rice, cover again, and cook for 8 to 10 minutes until the rice is tender and the cod flakes easily with a fork.
  10. Remove from heat and let rest for 5 minutes. Gently fluff the rice and fold in chopped parsley before serving.

Notes

  • Do not stir too vigorously after adding the cod to keep the flakes intact.
  • Measure liquid carefully to prevent mushy rice.
  • Let the dish rest before fluffing for the best texture.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
