Description

Chorizo & Potato Egg Casserole is a flavorful and hearty breakfast or brunch dish made with spicy chorizo, tender potatoes, and scrambled eggs, all baked together with melted cheese for a satisfying meal.


Ingredients

  • 1/2 lb chorizo sausage, casing removed
  • 2 cups diced potatoes (about 2 medium potatoes)
  • 1/4 cup onion, diced
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • Salt and pepper, to taste
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil (for frying potatoes)
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. In a skillet, cook chorizo over medium heat, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove from the pan and set aside.
  3. In the same skillet, heat olive oil over medium heat. Add diced potatoes and onion, cooking until potatoes are tender and golden brown (about 10-12 minutes). Season with salt, pepper, and smoked paprika.
  4. In a large bowl, whisk together eggs and milk. Season with salt and pepper.
  5. In the prepared baking dish, layer cooked potatoes and chorizo. Pour the egg mixture over the top and sprinkle with shredded cheddar cheese.
  6. Bake for 20-25 minutes, or until the eggs are set and the top is golden brown.
  7. Garnish with fresh cilantro or parsley before serving.

  • You can substitute the chorizo with turkey sausage for a leaner option.
