- 1/2 lb chorizo sausage, casing removed
- 2 cups diced potatoes (about 2 medium potatoes)
- 1/4 cup onion, diced
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- Salt and pepper, to taste
- 1/2 teaspoon smoked paprika
- 1 tablespoon olive oil (for frying potatoes)
- Fresh cilantro or parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- In a skillet, cook chorizo over medium heat, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove from the pan and set aside.
- In the same skillet, heat olive oil over medium heat. Add diced potatoes and onion, cooking until potatoes are tender and golden brown (about 10-12 minutes). Season with salt, pepper, and smoked paprika.
- In a large bowl, whisk together eggs and milk. Season with salt and pepper.
- In the prepared baking dish, layer cooked potatoes and chorizo. Pour the egg mixture over the top and sprinkle with shredded cheddar cheese.
- Bake for 20-25 minutes, or until the eggs are set and the top is golden brown.
- Garnish with fresh cilantro or parsley before serving.
Notes
- You can substitute the chorizo with turkey sausage for a leaner option.
