- 6 chocolate cookies
- 1 cup rainbow sprinkles (340 g)
Instructions
- Let vanilla ice cream soften at room temperature for 5–10 minutes.
- Scoop a generous portion of ice cream onto the flat side of one chocolate cookie.
- Place a second cookie on top and gently press to create a sandwich.
- Roll the edges of the ice cream in rainbow sprinkles, pressing gently to stick.
- Place each sandwich on a parchment-lined tray and repeat with remaining ingredients.
- Freeze sandwiches for at least 30 minutes before serving.
Notes
- Use soft cookies to prevent cracking when assembling.
