Description

Fun, colorful, and delicious, these Chocolate Sprinkles Ice Cream Sandwiches are made with soft chocolate cookies, creamy vanilla ice cream, and rolled in rainbow sprinkles — a perfect frozen treat for any occasion.


Ingredients

  • 1 pint vanilla ice cream (475 g)
  • 6 chocolate cookies
  • 1 cup rainbow sprinkles (340 g)


Instructions

  1. Let vanilla ice cream soften at room temperature for 5–10 minutes.
  2. Scoop a generous portion of ice cream onto the flat side of one chocolate cookie.
  3. Place a second cookie on top and gently press to create a sandwich.
  4. Roll the edges of the ice cream in rainbow sprinkles, pressing gently to stick.
  5. Place each sandwich on a parchment-lined tray and repeat with remaining ingredients.
  6. Freeze sandwiches for at least 30 minutes before serving.
