Decadent chocolate cookies with a crackly exterior and gooey molten centers that melt in your mouth—just like your favorite lava cake in cookie form.

- 1½ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs and vanilla extract to the butter mixture and beat until smooth.
- Gradually add dry ingredients and mix until combined to form a soft dough.
- Scoop 1 tablespoon of dough, flatten slightly, add a few chocolate chips in the center, then top with another tablespoon of dough, sealing edges.
- Place cookies on baking sheet, spacing 2 inches apart, and flatten tops slightly.
- Bake for 10–12 minutes until edges are set and centers look soft.
- Cool on sheet for 5 minutes, then transfer to a wire rack.
- Dust with powdered sugar or sea salt before serving if desired.
Notes
- Freeze chocolate chunks before adding to centers for extra gooey lava.
- Microwave leftovers for 10–15 seconds to revive molten centers.
- Use a cookie scoop for even portioning.
- Do not overbake or centers will set too firm.
