Description

Decadent chocolate cookies with a crackly exterior and gooey molten centers that melt in your mouth—just like your favorite lava cake in cookie form.


Ingredients

Scale
  • 1½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs and vanilla extract to the butter mixture and beat until smooth.
  5. Gradually add dry ingredients and mix until combined to form a soft dough.
  6. Scoop 1 tablespoon of dough, flatten slightly, add a few chocolate chips in the center, then top with another tablespoon of dough, sealing edges.
  7. Place cookies on baking sheet, spacing 2 inches apart, and flatten tops slightly.
  8. Bake for 10–12 minutes until edges are set and centers look soft.
  9. Cool on sheet for 5 minutes, then transfer to a wire rack.
  10. Dust with powdered sugar or sea salt before serving if desired.

Notes

  • Freeze chocolate chunks before adding to centers for extra gooey lava.
  • Microwave leftovers for 10–15 seconds to revive molten centers.
  • Use a cookie scoop for even portioning.
  • Do not overbake or centers will set too firm.
