- 2 large potatoes
- 45g plain wheat flour
- 20g cornstarch
- ½ tablespoon chipotle paste
- 2 teaspoons salt
- Extra virgin olive oil, for frying
Instructions
- Wash and cut the potatoes into thick wedges, about 1 inch wide.
- Soak the wedges in cold water for 20–30 minutes to remove excess starch, then pat dry completely with paper towels.
- In a bowl, combine plain flour, cornstarch, salt, and chipotle paste. Add a small splash of water if needed to help the paste mix evenly.
- Toss the dried potato wedges in the flour mixture until evenly coated.
- Heat extra virgin olive oil in a deep skillet or frying pan over medium heat.
- Fry the wedges in small batches for 6–8 minutes, turning occasionally, until golden and crispy.
- Remove from oil with a slotted spoon and drain on paper towels. Sprinkle with a pinch of salt while still hot.
- Serve immediately with your favorite dip such as smoky mayo or garlic aioli.

- For extra crispiness, parboil wedges for 5 minutes before coating.
- Air fry at 400°F for 20–25 minutes for a lighter option.
