Description

Sausage & Pepper One-Pan Lasagne is a comforting, flavorful twist on traditional lasagna. Packed with sausage, bell peppers, and layered with pasta and cheese, all baked in one pan for an easy and hearty meal.


Ingredients

  • 1 lb Italian sausage, casing removed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 9 no-boil lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large ovenproof skillet, heat olive oil over medium heat. Add sausage and cook, breaking it up, until browned and fully cooked, about 6–8 minutes.
  3. Add the diced onion, bell peppers, and garlic. Cook for 3–4 minutes, until softened.
  4. Stir in crushed tomatoes, tomato paste, oregano, basil, crushed red pepper flakes (if using), and season with salt and pepper. Bring to a simmer and cook for 5 minutes.
  5. Stir in broken lasagna noodles and ricotta cheese. Pour in 2 cups of water, mixing until the noodles are submerged in the sauce.
  6. Cover the skillet with foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil, sprinkle the mozzarella and Parmesan cheeses on top, and return to the oven. Bake for an additional 10–15 minutes, until the cheese is melted and bubbly.
  8. Let the lasagne cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.

Notes

  • For a healthier version, use turkey sausage or a meatless sausage alternative.
  • If you prefer extra cheesy lasagna, add more mozzarella and ricotta layers between the noodles.
  • Serve with a simple green salad for a complete meal.
