Description
Sausage & Pepper One-Pan Lasagne is a comforting, flavorful twist on traditional lasagna. Packed with sausage, bell peppers, and layered with pasta and cheese, all baked in one pan for an easy and hearty meal.

- 1 lb Italian sausage, casing removed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 can (6 oz) tomato paste
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes (optional)
- 9 no-boil lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large ovenproof skillet, heat olive oil over medium heat. Add sausage and cook, breaking it up, until browned and fully cooked, about 6–8 minutes.
- Add the diced onion, bell peppers, and garlic. Cook for 3–4 minutes, until softened.
- Stir in crushed tomatoes, tomato paste, oregano, basil, crushed red pepper flakes (if using), and season with salt and pepper. Bring to a simmer and cook for 5 minutes.
- Stir in broken lasagna noodles and ricotta cheese. Pour in 2 cups of water, mixing until the noodles are submerged in the sauce.
- Cover the skillet with foil and bake in the preheated oven for 25 minutes.
- Remove the foil, sprinkle the mozzarella and Parmesan cheeses on top, and return to the oven. Bake for an additional 10–15 minutes, until the cheese is melted and bubbly.
- Let the lasagne cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.
Notes
- For a healthier version, use turkey sausage or a meatless sausage alternative.
- If you prefer extra cheesy lasagna, add more mozzarella and ricotta layers between the noodles.
- Serve with a simple green salad for a complete meal.
