Description

A Chicken Torta is a Mexican sandwich filled with juicy grilled chicken, creamy avocado, fresh veggies, and a tangy sauce, all packed in a soft, toasted roll. It’s a perfect balance of flavors and textures for a satisfying meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 bolillo rolls or Mexican telera bread (or any soft sandwich rolls)
  • 1 avocado, sliced
  • 1/2 cup refried beans
  • 1/2 onion, thinly sliced
  • 1 tomato, thinly sliced
  • 1/2 cup mayonnaise
  • 1 tablespoon hot sauce (optional)
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat a grill or skillet over medium heat. Season the chicken breasts with salt, pepper, and cumin. Drizzle with olive oil.
  2. Grill or cook the chicken for about 6–7 minutes per side until fully cooked and golden brown. Let the chicken rest for a few minutes, then slice it thinly.
  3. While the chicken cooks, slice the onion and tomato, and prepare the avocado and mayonnaise sauce. In a small bowl, mix the mayonnaise with lime juice and hot sauce (if using).
  4. Slice the bolillo rolls or sandwich rolls in half and toast them lightly on the grill or in a toaster.
  5. Spread a thin layer of refried beans on the bottom half of each toasted roll. Top with the sliced chicken, avocado, onion, and tomato.
  6. Drizzle the mayonnaise sauce over the toppings and garnish with fresh cilantro if desired.
  7. Place the top half of the roll on and press the sandwich lightly. Serve immediately.

Notes

  • For extra flavor, you can grill the rolls on the grill with a bit of butter before assembling the torta.
  • If you prefer a spicier sandwich, add pickled jalapeños or more hot sauce to the mayo mix.
  • This recipe can be made with leftover chicken for a quick meal.
