- 4 bone-in, skin-on chicken thighs
- 2 Italian sausage links, sliced
- 1 tbsp olive oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 bell pepper, sliced
- 1/2 cup white wine
- 1/4 cup chicken broth
- 2 tbsp white wine vinegar
- 1 tsp red pepper flakes
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken thighs and cook until browned on both sides, about 5-7 minutes per side. Remove chicken from the skillet and set aside.
- In the same skillet, add sliced sausage and cook for 2-3 minutes until browned.
- Add the onion, bell pepper, and garlic to the skillet. Cook until softened, about 5 minutes.
- Deglaze the pan with white wine, scraping up any browned bits from the bottom of the skillet.
- Add chicken broth, white wine vinegar, red pepper flakes, salt, and pepper. Stir to combine.
- Return the chicken thighs to the skillet, skin side up. Cover and simmer for 20-25 minutes, until the chicken is cooked through and tender.
- Garnish with fresh parsley before serving. Serve hot with crusty bread or over pasta if desired.
Notes
- For extra heat, you can add more red pepper flakes to taste.
- This dish pairs well with mashed potatoes or a side of roasted vegetables.
- For a richer flavor, you can use chicken breasts instead of thighs, but the cooking time may be shorter.
