Description

Chicken Scarpariello is a classic Italian-American dish featuring tender chicken, spicy sausage, and a tangy white wine sauce with peppers and garlic.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 Italian sausage links, sliced
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1/2 cup white wine
  • 1/4 cup chicken broth
  • 2 tbsp white wine vinegar
  • 1 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken thighs and cook until browned on both sides, about 5-7 minutes per side. Remove chicken from the skillet and set aside.
  2. In the same skillet, add sliced sausage and cook for 2-3 minutes until browned.
  3. Add the onion, bell pepper, and garlic to the skillet. Cook until softened, about 5 minutes.
  4. Deglaze the pan with white wine, scraping up any browned bits from the bottom of the skillet.
  5. Add chicken broth, white wine vinegar, red pepper flakes, salt, and pepper. Stir to combine.
  6. Return the chicken thighs to the skillet, skin side up. Cover and simmer for 20-25 minutes, until the chicken is cooked through and tender.
  7. Garnish with fresh parsley before serving. Serve hot with crusty bread or over pasta if desired.

Notes

  • For extra heat, you can add more red pepper flakes to taste.
  • This dish pairs well with mashed potatoes or a side of roasted vegetables.
  • For a richer flavor, you can use chicken breasts instead of thighs, but the cooking time may be shorter.
